Meatloaf Base
  • 2 lbs ground beef 80/20 recommended
  • 2 large eggs
  • 1/2 cup almond flour
  • 1/3 cup grated parmesan cheese
  • 1 small onion finely chopped
  • 3 cloves garlic minced
  • 2 tbsp fresh parsley chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1 tsp Italian seasoning
Keto Glaze
  • 1/4 cup sugar-free ketchup or tomato paste
  • 1 tbsp apple cider vinegar
  • 1 tsp mustard
  • 1 tsp keto sweetener optional

Equipment

  • Large mixing bowl
  • Loaf pan or baking tray
  • Parchment paper (optional but recommended)
  • Measuring cups and spoons
  • Mixing spoon or hands for blending
  • Small bowl (for glaze)

Method
 

  1. Preheat oven to 180°C (350°F) and line or grease a loaf pan.
  2. In a large bowl, combine ground beef, eggs, almond flour, parmesan, onion, garlic, parsley, and seasonings. Mix gently until just combined.
  3. Shape mixture into a loaf and place into prepared pan or baking tray.
  4. In a small bowl, mix glaze ingredients until smooth.
  5. Spread half of the glaze over the meatloaf before baking.
  6. Bake for 45–55 minutes until fully cooked and internal temperature reaches 70°C (160°F).
  7. Add remaining glaze halfway through baking for extra flavor.
  8. Remove from oven and let rest for 10 minutes before slicing.

Notes

Do not overmix the meat to avoid a dense texture.
Use 80/20 ground beef for best moisture and flavor.
Resting time is essential for clean slicing and juicy texture.
Can be easily doubled for meal prep or freezing.
